- 50 ml double cream

There are so many healthy veggie breakfast ideas out there. Yet, in my opinion, the best veggie breakfast is the one you make with whatever you have in your pantry or fridge.
With this thought in mind, I wanted to create something sweet and spicy, so I took the ingredients available in the house that suited my cravings. The result was a delicious low carb veggie breakfast which I think you should be trying as well. So, here is what you need to do:
- Take a nonstick pan and heat up the olive oil in it.
- Chop the green onion and cook it in the pan on medium heat for a couple of minutes along with your hot, dry chili.
- Add the chopped zucchini and let it cook for 2-5 minutes. You want it cooked but not mushy.
- Make sure you drain well the sweet corn. When done, bring it to the pan and stir to combine.
- It's time to add the baby spinach. I suggest doing it in batches as it will need space. However, in just 30 seconds, it will lower in size, and you will be able to add another batch.
- Cook the spinach for a minute, then pour the double cream in. Stir to combine, bring the stove to medium-low, and simmer for 30 seconds to a minute—season with salt and pepper to taste and let it rest.
- In another skillet, heat up the frying oil and fry your eggs sunny-side-up. I suggest you leave them softer as the yolk will combine perfectly with the veggies, but if you like your eggs hard, then make them hard.
- Plate the veggies, add the cranberries if using, and then top everything with the eggs. Serve immediately.
Eating veggies for breakfast is healthy and delicious. Moreover, it is cheaper and faster to prepare than other more complicated alternatives. In just 15 minutes, you can make multiple veggie breakfast recipes that will boost your morning start.

* If you want a full vegan breakfast, just replace the double cream with a vegan version and skip the egg. I might suggest adding some nuts if you do so.
