- 1-2 tbsp herbs of your choice such as parsley, thyme or green garlic
- 2 large eggs
- 200ml milk
- 50ml double cream
- Salt and pepper, to taste
- Butter, for greasing the pan

Potatoes, oh how I love them! Whether they're mashed, roasted, boiled, or fried, potatoes are one of the most versatile and comforting ingredients out there. And one of my favorite ways to enjoy them is in a cheesy potato bake.
There's just something about the creamy, cheesy goodness of this dish that makes it the ultimate comfort food. Plus, with the added nutrition of sliced onions, this recipe is not only delicious, but also satisfying and wholesome.
So let's see how to make potato pie with cheese, my crispy and easy version.
Instructions:
- Preheat the oven to 180 degrees Celsius.
- Using a mandoline or a sharp knife, finely slice the potatoes and onion.
- In a large mixing bowl, combine the sliced potatoes and onion with the grated cheddar and mozzarella cheeses. Add the herbs and combine.
- In a separate bowl, beat together the eggs, milk, and double cream. Season with salt and pepper.
- Pour the egg mixture over the potato and cheese mixture, and stir well to combine.
- Grease a large oven-proof pan with butter.
- Transfer the potato mixture to the greased pan, spreading it out evenly.
- Bake in the preheated oven for 1 hour or until the top is golden brown and crispy, and the potatoes are cooked through.
- Remove from the oven and allow to cool for a few minutes before serving.
Traditional Slab Pies vs This Cheesy Potato Slab Pie
Now let me tell you that normally a slab pie is a versatile, rectangular pie baked in a sheet pan, offering a thinner, more portable take on traditional pie. Originating as a practical way to serve pie to a crowd, slab pies are often filled with fruit or savory ingredients and cut into squares for easy sharing.
However, even though this recipe doesn't fit the traditional definition of a slab pie I went on and named it "Cheesy Potato Slab Pie" because it shares the casual, crowd-pleasing spirit of a slab pie. The dish is sliced into portions, making it easy to serve and share like a traditional slab pie, and it has that same comforting, homey feel.
Furthermore, by forgoing a crust and focusing on creamy, cheesy potatoes, I've reimagined the slab pie concept in a way that’s both accessible and unique.
As for influences, I have to admit that this recipe draws on influences from French gratins and American comfort food, pairing the smooth richness of cheddar and mozzarella with the natural starchiness of potatoes. The egg mixture gives structure without heaviness, while the fresh herbs add a subtle aroma.All the ingredients combined, bring a nutritional boost, making this dish as wholesome as it is comforting.
