- Press 300g of tofu in a towel to remove excess moisture.
- In a bowl, mix the following spices: 1/2 tsp turmeric, hot paprika to taste, 1 tsp sweet paprika, 1/2 tsp black salt, pepper to taste, and 1 tsp granulated garlic with a teaspoon of tahini, 20 ml rice cream, and 2 tablespoons of nutritional yeast.
- Crumble the tofu and sauté it in a tablespoon of olive oil over medium heat, stirring for 5 minutes.
- Add the spice mixture with rice cream and tahini to the tofu and cook for another minute.
- Then, set aside.
Bulgur Mix:
- In another pan, sauté a finely chopped onion with 2 minced garlic cloves.
- Add 1 tsp cumin, 1/2 tsp ground black lime, 1 tsp ras el hanout, salt, and pepper to taste, along with 2 tablespoons of tomato paste.
- Pour in 400ml water, 1 teaspoon of sugar, salt, and pepper.
- Cook for 5-6 minutes until the mixture reduces.
- Then, add the cooked bulgur.
- Let it simmer for a few minutes, cover and set aside.
Spinach and Toppings:
- In a separate pan, sauté 200g spinach in a tablespoon of olive oil, seasoned with salt and pepper to taste, and 1.5 tsp granulated garlic.
- Cook it until it reduces its size, then remove from heat.
- Chop one or two pickled cucumbers and mix with 1 tablespoon of za'atar, 1 tablespoon of olive oil, and hot sauce (like sriracha) to taste.
Serving:
